Perfect for breakfast, a snack, or a healthy dessert, this smoothie tastes like your favorite key lime pie but is quick to make and nutritious.
Ingredients
Main Ingredients
- 1 large frozen ripe banana, sliced
- Zest from 1 small lime or key lime
- 2 tablespoons fresh lime or key lime juice
- ½ cup vanilla or coconut Greek yogurt (use coconut-based yogurt to keep it dairy-free)
- ½ cup light coconut milk (or milk of choice)
- ½ cup fresh spinach
- ½ teaspoon vanilla extract
- Optional: 1-2 teaspoons maple syrup or honey to sweeten if necessary
For Serving
- Extra lime wedge, for rimming glass
- Graham cracker crumbs
- Whipped cream
- Shredded toasted coconut
Instructions
- Prepare the glass: Add crushed graham crackers to a small plate. Use a lime wedge to moisten the rim of the glass, then dip the glass rim into the graham cracker crumbs, rolling it from side to side until the rim is evenly coated.
- Add ingredients to blender: Place the frozen banana, lime zest, lime juice, vanilla or coconut Greek yogurt, coconut milk, fresh spinach, and vanilla extract into a high-powered blender.
- Blend until smooth: Blend all ingredients until smooth and creamy. If the smoothie is too thick, add a little more milk to reach your desired consistency.
- Adjust sweetness: Taste the smoothie and add 1-2 teaspoons of maple syrup or honey if you prefer a sweeter flavor, though vanilla yogurt usually provides enough sweetness.
- Serve: Pour the smoothie into the prepared glass with the graham cracker rim. Top with whipped cream and a sprinkle of shredded toasted coconut for garnish. Serve immediately.
Notes
- Use coconut-based yogurt to keep this recipe dairy-free or opt for vanilla Greek yogurt for added creaminess.
- If you don’t have key limes, regular limes work perfectly fine as a substitute.
- Feel free to double or triple the ingredients to serve more people.
- To toast shredded coconut, spread it on a baking sheet and bake at 350°F (175°C) for 5-7 minutes until golden and fragrant, stirring occasionally.
- Spinach is added for a nutritional boost but does not affect the taste significantly.
- Use frozen ripe bananas for natural sweetness and a creamy texture without added ice.
