Ingredients
For the Soup
- 1 large cucumber, peeled and chopped into a few pieces
- 1 avocado, flesh only
- 1 jalapeno, trimmed and deseeded
- 1/2 lemon, juiced
- 3 tbsp fresh cilantro (or 1/4 cup for stronger flavor)
- 1/2 tsp salt
- 1/2 cup water (plus more as needed for blending)
For Serving
- 1/2 cup chopped pineapple
- 1/2 cup chopped cucumber
Instructions
- Prepare the ingredients: Peel and chop the large cucumber into a few pieces. Remove the flesh from the avocado. Trim and deseed the jalapeno to reduce heat, then prepare fresh cilantro by measuring 3 tablespoons, or 1/4 cup for more intense flavor.
- Blend the soup: In a blender, combine the chopped cucumber, avocado flesh, deseeded jalapeno, fresh lemon juice, cilantro, salt, and 1/2 cup water. Blend until completely smooth, adding more water gradually if the soup is too thick. Taste and adjust salt or lemon juice as needed for balance.
- Chill the soup: Transfer the blended mixture into a container and refrigerate for at least one hour to let the flavors meld and the soup chill properly. For an even better taste, chilling for two or more hours is recommended.
- Serve: When ready to eat, pour the chilled soup into bowls and garnish with the chopped pineapple and chopped cucumber to add texture and a touch of sweetness. Enjoy immediately for the freshest flavor.
