Ingredients
Grains
- 4 cups cooked rice (about 1.5 cups uncooked rice)
Proteins
- 1 lb. ground turkey or beef
- 1 15oz. can black beans, rinsed and drained
- 4 oz. cheese (about 1 cup shredded)
Vegetables & Extras
- 1 cup frozen corn kernels, thawed
- 2 green onions, sliced
- 1 1/3 cups salsa
Seasoning
- Taco seasoning, about 1 packet or 2 tablespoons
- 1/2 cup water (for simmering the seasoned meat)
Instructions
- Cook the Rice: Prepare the rice according to package directions to yield 4 cups cooked rice. Typically, use 1.5 cups uncooked rice and 2.5 cups water. While the rice cooks, proceed to prepare the other ingredients.
- Cook the Meat: Heat a skillet over medium heat. Add the ground turkey or beef, optionally adding a bit of oil depending on the meat’s fat content, and cook until fully browned and no longer pink.
- Season the Meat: Stir in the taco seasoning and 1/2 cup water. Simmer the mixture for about 5 minutes until the water reduces and forms a saucy consistency. Remove from heat and set aside.
- Prepare the Additional Ingredients: Thaw the frozen corn kernels. Rinse and drain the black beans. Shred the cheese and slice the green onions.
- Assemble the Bowls: Fluff the cooked rice with a fork and evenly distribute it into four containers. Top each with the seasoned meat, corn, black beans, shredded cheese, salsa, and sliced green onions.
- Reheat and Serve: When ready to eat, reheat the bowls in the microwave for 1-2 minutes until the cheese melts and the components are warmed through.
Notes
- Use lean ground turkey for a lower-fat option or ground beef for richer flavor.
- Adjust taco seasoning amount according to your taste preference or dietary restrictions.
- Can use brown rice instead of white rice for added fiber, but cooking times may vary.
- Store meal prep bowls covered in the refrigerator for up to 4 days.
- Feel free to add extra toppings like avocado, sour cream, or cilantro before serving.
