Meatball Mixture

  • ¼ cup buffalo sauce (remaining, for tossing)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, ¼ cup buffalo sauce, egg, thinly sliced green onions, grated carrots, almond flour or breadcrumbs, garlic powder, onion powder, sea salt, and black pepper. Mix thoroughly until all ingredients are evenly distributed.
  3. Form Meatballs: Using a cookie scoop or small spoon, scoop out portions of the meat mixture. Use your hands to gently form each portion into a ball, ensuring they’re compact but not overworked.
  4. Bake Meatballs: Place the formed meatballs evenly spaced on the prepared baking sheet. Bake in the preheated oven for 18-20 minutes, or until cooked through and golden.
