Ingredients
Blue Cheese Steak Sauce Ingredients
- 1 tbsp butter
- 1 banana shallot, finely chopped
- Salt, to taste
- 4 tbsp apple cider vinegar
- ½ cup heavy cream
- 6 oz blue cheese, crumbled and divided
- 1 tsp Worcestershire sauce
- ½ tsp garlic powder
- Black pepper, to taste
- 1 tbsp chopped chives
Instructions
- Cook Shallots: Melt the butter in a medium saucepan over medium heat. Add the finely chopped banana shallot with a pinch of salt and gently cook for about 5 minutes until the shallot is soft and just starting to color, developing a sweet and mellow flavor base.
- Deglaze and Combine Ingredients: Splash in the apple cider vinegar and let it bubble for one minute to reduce slightly and enhance acidity. Then stir in the heavy cream, half of the crumbled blue cheese, Worcestershire sauce, and garlic powder to the pan, combining all ingredients evenly.
- Simmer and Thicken: Once the mixture starts to bubble, continue cooking gently for 5 minutes. During this time, the cheese will melt into the sauce and it will thicken, creating a smooth and creamy texture perfect for drizzling.
- Finish the Sauce: Remove the saucepan from heat and stir in the remaining blue cheese and chopped chives, allowing the second portion of cheese to partially melt and lend extra texture and flavor. Season with additional salt and black pepper to taste.
- Serve Immediately: Use the sauce right away with your preferred steak or grilled meat to enjoy the full vibrant and creamy blue cheese flavor at its best.
Notes
- Use banana shallots for a mild, slightly sweet onion flavor; regular shallots work as well.
- If you prefer a thinner sauce, reduce the simmering time slightly.
- For a stronger blue cheese flavor, add more crumbled cheese to taste.
- The sauce is best served fresh but can be gently reheated on low heat if needed.
- Chives add a fresh, herbaceous note which complements the creamy sauce nicely.
