Ingredients

Truffle Base

  • 45 Biscoff cookies
  • ¼ cup Biscoff cookie butter
  • 8 ounces cream cheese, softened

Chocolate Coating

  • 10-12 ounces white chocolate, finely chopped

  • 2 tablespoons Biscoff cookie butter


Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set it aside to prevent sticking and facilitate easy cleanup.
  2. Crush Cookies: Place the Biscoff cookies into a food processor and pulse until they become fine crumbs, ensuring a smooth texture for the truffle mixture.
  3. Combine Ingredients: Warm ¼ cup of Biscoff cookie butter in a microwave-safe bowl for 15-20 seconds and stir until smooth. Add the warmed cookie butter and softened cream cheese to the food processor with the crumbs, pulsing until fully combined into a thick, cohesive dough.
  4. Form Truffles: Scoop out the dough and use your hands to roll it into 1-inch balls. Place each ball onto the lined baking sheet. Chill the truffles in the refrigerator for at least 1 hour, or alternatively freeze for 20 minutes to firm up.
  5. Melt White Chocolate: Remove truffles from the fridge when ready. Melt the chopped white chocolate in the microwave in 30-second increments, stirring well after each until fully melted and smooth.
  6. Coat Truffles: Using a fork or dipping tool, dip each chilled truffle ball into the melted white chocolate to coat thoroughly. Gently shake off excess chocolate and return the coated truffles to the parchment-lined baking sheet.
  7. Chill to Set: Place the coated truffles back into the refrigerator for an additional hour or until the white chocolate coating is firm and set.
  8. Decorate (Optional): For decoration, microwave 2 tablespoons of Biscoff cookie butter for 15 seconds, stir well, then drizzle or pipe it over the truffles. Chill again until the decoration is set before serving.
