Description

A delicious and crowd-pleasing Best Nachos Supreme Recipe featuring seasoned ground beef, refried beans, melty cheddar cheese, and fresh toppings like tomatoes, jalapenos, and cilantro. Perfect for parties, game days, or quick, satisfying dinners!

Ingredients

Meat and Seasoning

  • 1 pound ground beef (93% lean)
  • ½ cup yellow onion, finely chopped
  • 3 jalapeno peppers, seeded and finely chopped, divided
  • 4 ounces green chiles
  • 1 ounce taco seasoning

Base and Cheese

  • 16 ounces tortilla chips
  • 15 ounces refried beans
  • 2 cups cheddar cheese, shredded

Toppings

  • 1 cup cherry tomatoes, halved
  • 3 green onions, sliced
  • 2 tablespoons cilantro, chopped
  • 1 cup sour cream (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400° F (204° C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook Beef and Onion: In a large skillet over medium heat, add the ground beef and chopped onions. Cook for 5-7 minutes until the beef is browned and juices run clear, stirring occasionally.
  3. Drain Excess Grease: Carefully drain any excess grease from the cooked beef mixture to reduce fat content and prevent soggy nachos.
  4. Season Beef Mixture: Add ¾ of the finely chopped jalapenos, green chiles, and taco seasoning to the skillet with the beef. Stir thoroughly until well combined. Remove from heat and set aside.
  5. Assemble Nachos: Spread the tortilla chips evenly on the prepared baking sheet. Layer the refried beans evenly over the chips, followed by the seasoned beef mixture, and then sprinkle the shredded cheddar cheese over the top.
  6. Bake Nachos: Place the baking sheet in the preheated oven and bake for 15 minutes or until the cheese is completely melted and bubbly.
  7. Add Fresh Toppings: Remove the baking sheet from the oven, then sprinkle the halved cherry tomatoes, sliced green onions, the remaining jalapenos, and chopped cilantro over the nachos.
  8. Serve with Sour Cream: Optionally, dollop sour cream on top or serve it on the side. Serve immediately to enjoy the nachos warm and fresh.

Notes

  • You can adjust the amount of jalapenos to control spiciness.
  • For a vegetarian version, omit the ground beef and substitute with extra beans or vegetarian crumbles.
  • Ensure to drain excess grease to keep nachos crispy.
  • Use freshly shredded cheddar cheese for better melting and flavor.
  • Serve immediately after baking as chips may become soggy if left too long.
