- 3 Tbsp. tahini
- 2 Tbsp. olive oil
- 1 whole lemon, juiced
- 2-3 cloves garlic
- 1/2 tsp. cumin
- Salt, to taste
- 2 Tbsp. reserved chickpea liquid
- Drizzle of olive oil (for serving)
- Flaky sea salt (for garnish)
- Za’atar or Everything Bagel Seasoning (optional, for garnish)
- Warm pita or veggies (for serving)
Instructions
- Blend Beets: Add the drained pre-cooked beets to a high-speed blender and process until completely smooth and creamy. This initial step helps retain the bright pink color of the hummus.
- Add Remaining Ingredients: To the smooth beet mixture, add drained chickpeas, tahini, olive oil, freshly squeezed lemon juice, garlic cloves, ground cumin, salt, and 2 tablespoons of the reserved chickpea liquid. Blend everything together until the mixture is smooth and well combined.
- Adjust Consistency and Flavor: Taste the hummus and adjust the salt or lemon juice as needed. If the hummus is too thick, add an additional tablespoon of reserved chickpea liquid and blend again to reach your desired consistency.
- Serve: Transfer the beet hummus to a serving dish, drizzle with olive oil, and sprinkle flaky sea salt and your choice of Za’atar or Everything Bagel Seasoning on top. Serve alongside warm pita bread or fresh vegetables for dipping.
