Bang Bang Sauce

- 2 teaspoons soy sauce
Chicken and Seasoning
- 2 large chicken breasts (or thighs/tenderloins), cut into cubes (about 1 lb / 450 grams)
- ½ teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon chopped cilantro (fresh coriander)
- Bamboo or metal skewers
- Oil spray (if needed)
Instructions
- Make the sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha sauce, honey, lime juice, and soy sauce. Stir well to create the creamy bang bang sauce and set it aside.
- Season the chicken: Toss the chicken cubes with salt, garlic powder, and smoked paprika until evenly coated, ensuring the flavors are well distributed.
- Marinate: Add 4 to 5 tablespoons of the prepared bang bang sauce to the seasoned chicken, mixing thoroughly. Let the chicken marinate for 10-15 minutes at room temperature, or for enhanced flavor, refrigerate overnight.
- Thread onto skewers: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning. Thread 6 to 8 pieces of chicken onto each skewer, leaving some space between pieces for even cooking.
