Ingredients

Crust

  • 1 ½ cups (201g) graham cracker crumbs
  • 2 tablespoons (26g) granulated sugar
  • ½ cup (112g) butter (melted)

Filling

  • 8 ounces (226g) cream cheese (room temperature)
  • 1 avocado
  • ½ cup (104g) granulated sugar
  • 3 tablespoons (45ml) Key lime juice
  • ¾ cup (180ml) heavy whipping cream (cold)
  • 6 tablespoons (44g) powdered sugar
  • ½ tablespoon lime zest

Topping

  • ½ cup (120ml) heavy whipping cream (cold)
  • ¼ cup (29g) powdered sugar
  • ½ teaspoon coconut extract
  • Lime slices (for garnish)
  • Shredded coconut (for garnish, optional)


Instructions

  1. Prepare the crust: Grease an 8- or 9-inch pie pan and preheat the oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a medium bowl and mix until well combined.
  2. Form and bake crust: Press the crumb mixture evenly into the bottom and up the sides of the pie pan. Bake the crust for 8 minutes to set, then remove from oven and set aside to cool.
  3. Make the avocado filling: In a food processor, add cream cheese, avocado, sugar, and Key lime juice. Puree until the mixture is smooth and well combined.
  4. Whip cream for filling: In a mixing bowl, whip the cold heavy whipping cream with powdered sugar until stiff peaks form.
  5. Combine filling and whipped cream: Gently fold the avocado mixture and lime zest into the whipped cream to create a light, airy filling.
  6. Assemble and chill pie: Spread the filling evenly into the baked crust. Refrigerate the pie for 4–5 hours, or overnight, until the filling is firm and set.
  7. Prepare whipped cream topping: When ready to serve, whip the remaining heavy whipping cream with powdered sugar and coconut extract in a mixer bowl until stiff peaks form.
  8. Decorate the pie: Pipe swirls of the whipped cream topping around the edge of the pie. Garnish with lime slices and toasted shredded coconut for a tropical flair.
