Ingredients
Crust
- 1 ½ cups (201g) graham cracker crumbs
- 2 tablespoons (26g) granulated sugar
- ½ cup (112g) butter (melted)
Filling
- 8 ounces (226g) cream cheese (room temperature)
- 1 avocado
- ½ cup (104g) granulated sugar
- 3 tablespoons (45ml) Key lime juice
- ¾ cup (180ml) heavy whipping cream (cold)
- 6 tablespoons (44g) powdered sugar
- ½ tablespoon lime zest
Topping
- ½ cup (120ml) heavy whipping cream (cold)
- ¼ cup (29g) powdered sugar
- ½ teaspoon coconut extract
- Lime slices (for garnish)
- Shredded coconut (for garnish, optional)
Instructions
- Prepare the crust: Grease an 8- or 9-inch pie pan and preheat the oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a medium bowl and mix until well combined.
- Form and bake crust: Press the crumb mixture evenly into the bottom and up the sides of the pie pan. Bake the crust for 8 minutes to set, then remove from oven and set aside to cool.
- Make the avocado filling: In a food processor, add cream cheese, avocado, sugar, and Key lime juice. Puree until the mixture is smooth and well combined.
- Whip cream for filling: In a mixing bowl, whip the cold heavy whipping cream with powdered sugar until stiff peaks form.
- Combine filling and whipped cream: Gently fold the avocado mixture and lime zest into the whipped cream to create a light, airy filling.
- Assemble and chill pie: Spread the filling evenly into the baked crust. Refrigerate the pie for 4–5 hours, or overnight, until the filling is firm and set.
- Prepare whipped cream topping: When ready to serve, whip the remaining heavy whipping cream with powdered sugar and coconut extract in a mixer bowl until stiff peaks form.
- Decorate the pie: Pipe swirls of the whipped cream topping around the edge of the pie. Garnish with lime slices and toasted shredded coconut for a tropical flair.
Notes
- Ensure the cream cheese is at room temperature for a smoother filling.
- Use ripe avocado for the best creamy texture and flavor.
- Chill the pie long enough to let the filling fully set for better slicing.
- To toast shredded coconut, lightly brown it in a dry skillet over medium heat for a few minutes, stirring frequently.
- This pie can be made a day ahead and stored covered in the refrigerator.
