Description
A creamy and comforting Asparagus Broccoli Soup made with fresh vegetables and blended to a smooth texture. This vegan and dairy-free soup features tender asparagus, broccoli, and zucchini simmered in vegetable stock with herbs for a nourishing and flavorful meal.
Ingredients
Vegetables
- 1/2 white onion, diced
- 1-2 garlic cloves, minced or finely diced
- 2 cups asparagus, trimmed and diced
- 4 cups broccoli florets, diced
- 1/2 zucchini, diced
Liquids & Seasonings
- 1 tbsp olive oil
- 3 cups vegetable stock
- 1/2 cup non-dairy milk
- 1 tsp dried thyme
- 1 bay leaf
- Pinch of salt
- Pinch of black pepper (optional)
Instructions
- Sauté Onion and Garlic: Heat olive oil in a large pot over low heat and fry the diced onion until softened, about 5 minutes. Add the minced garlic and cook for an additional 2 minutes to deepen the flavor.
- Add Vegetables and Herbs: Stir in the broccoli florets, diced asparagus, and zucchini along with the bay leaf and dried thyme. Cook for 5 minutes, stirring occasionally to mix ingredients evenly.
- Simmer Soup: Pour in the vegetable stock and bring the mixture to a boil. Once boiling, reduce the heat to a gentle simmer and add the non-dairy milk. Season with salt and black pepper. Allow the soup to simmer uncovered for 30 minutes to develop flavors and soften vegetables.
- Blend and Serve: Remove the bay leaf. Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Ladle into bowls, then drizzle with a little olive oil and garnish with fresh mint leaves. Serve immediately for best taste.
Notes
- Use non-dairy milk like almond or oat milk for a creamy, vegan-friendly soup.
- If you prefer a chunkier texture, blend only half of the soup and stir the rest in.
- Fresh thyme can be used instead of dried for a more vibrant herb flavor.
- Garnish options include a sprinkle of nutritional yeast or toasted seeds for added texture.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
