A creamy and comforting Asparagus Broccoli Soup made with fresh vegetables and blended to a smooth texture. This vegan and dairy-free soup features tender asparagus, broccoli, and zucchini simmered in vegetable stock with herbs for a nourishing and flavorful meal.


Ingredients

Vegetables

  • 1/2 white onion, diced
  • 1-2 garlic cloves, minced or finely diced
  • 2 cups asparagus, trimmed and diced
  • 4 cups broccoli florets, diced
  • 1/2 zucchini, diced

Liquids & Seasonings

  • 1 tbsp olive oil
  • 3 cups vegetable stock
  • 1/2 cup non-dairy milk
  • 1 tsp dried thyme
  • 1 bay leaf
  • Pinch of salt
  • Pinch of black pepper (optional)


Instructions

  1. Sauté Onion and Garlic: Heat olive oil in a large pot over low heat and fry the diced onion until softened, about 5 minutes. Add the minced garlic and cook for an additional 2 minutes to deepen the flavor.
  2. Add Vegetables and Herbs: Stir in the broccoli florets, diced asparagus, and zucchini along with the bay leaf and dried thyme. Cook for 5 minutes, stirring occasionally to mix ingredients evenly.
  3. Simmer Soup: Pour in the vegetable stock and bring the mixture to a boil. Once boiling, reduce the heat to a gentle simmer and add the non-dairy milk. Season with salt and black pepper. Allow the soup to simmer uncovered for 30 minutes to develop flavors and soften vegetables.
  4. Blend and Serve: Remove the bay leaf. Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Ladle into bowls, then drizzle with a little olive oil and garnish with fresh mint leaves. Serve immediately for best taste.
