Description

This Ambrosia Salad is a delightful, creamy fruit salad featuring a mix of fresh pineapple, mandarin oranges, maraschino cherries, shredded coconut, and mini marshmallows, all combined with a whipped topping of heavy cream, sour cream, and sugar. Chilled to perfection, it’s a refreshing and sweet side dish or dessert that’s easy to prepare and perfect for gatherings or holiday meals.

Ingredients

Fruit and Mix-ins

  • 2 cups Fresh Pineapple (cut into small pieces)
  • 15-ounce can Mandarin Oranges (drained)
  • 14 ounces Maraschino Cherries (drained)
  • 1 cup Green Grapes (cut into halves)
  • 1 cup Sweetened Shredded Coconut
  • 3 cups Mini Marshmallows
  • 1/2 cup Pecans (chopped)

Whipped Cream Mixture

  • 1 1/3 cups Heavy Cream
  • 3 Tablespoons Sugar (add more if you want it sweeter)
  • 1/4 cup Sour Cream

Instructions

  1. Whip the Cream Mixture: In a large mixing bowl, combine the heavy cream and sugar. Whip the mixture using a mixer until soft peaks form. Gently fold in the sour cream to maintain a light and fluffy texture. Taste and add more sugar if desired for extra sweetness.
  2. Prepare the Pineapple: Cut the fresh pineapple into small bite-sized pieces to ensure easy mixing and eating.
  3. Combine Fruit and Mix-ins: In a large bowl, add the chopped pineapple, drained mandarin oranges, drained maraschino cherries, shredded coconut, and mini marshmallows. It is important to drain the canned fruits thoroughly to prevent the salad from becoming watery.
  4. Fold in the Whipped Cream Mixture: Carefully fold the whipped cream and sour cream mixture into the bowl of fruits and other ingredients, mixing gently to combine without deflating the whipped cream.
  5. Chill the Salad: Cover the bowl and place it in the refrigerator for about 2 hours. This chilling time allows the flavors to meld together and the salad to thicken up slightly before serving.

Notes

  • Make sure to thoroughly drain canned fruits to avoid a watery salad.
  • Adjust sugar levels according to your sweetness preference.
  • For extra texture, you can toast the pecans before adding.
  • This salad is best served chilled and within 24 hours for optimal freshness.
  • Optional: Substitute heavy cream with whipping cream for a lighter version.
