Instructions

  1. Preheat Oven: Preheat the oven to 350 °F (180 °C) to prepare for baking the crackers.
  2. Mix Ingredients: In a mixing bowl, combine almond flour, bagel seasoning, and water. Stir the mixture and press with a rubber spatula. It will appear dry initially.
  3. Knead Dough: Lightly oil your hands and knead the mixture until it comes together into a dough ball. Add additional water a teaspoon at a time if the dough is too crumbly.
  4. Prepare Dough for Rolling: Place the dough ball on a lightly oiled piece of parchment paper, then lightly oil another piece of parchment paper and place it on top of the dough (oiled side facing down).
  5. Roll Out Dough: Press the dough ball to flatten it slightly, then use a rolling pin to roll the dough thinly between the parchment papers. Thickness can be adjusted to preference but thinner crackers will bake faster.
  6. Cut Crackers: Remove the top parchment paper and use a pizza cutter to cut the dough into small squares, while leaving the crackers on the bottom parchment paper.
  7. Transfer for Baking: Slide the parchment paper with the cut crackers onto a large baking sheet.
  8. First Bake: Bake on the center oven rack at 350 °F (180 °C) for 10 minutes until crackers look pale and dry.
  9. Separate Crackers: Remove the baking sheet and gently separate crackers from each other using the tip of a knife, spacing them out to allow even baking on edges.
  10. Second Bake: Return the baking sheet to the oven and bake for an additional 5-7 minutes, watching carefully as the crackers lightly brown on the sides. Thinner crackers will brown faster.
  11. Cool Crackers: Let crackers cool on the baking sheet for 10 minutes, then transfer to a cooling rack and cool for another 20 minutes before serving to ensure they crisp up.
