Ingredients

Croquette Mixture

  • 2 tbsp butter
  • ¼ cup finely chopped onion
  • 1 clove garlic, minced
  • 1 cup cooked shredded chicken
  • 1 cup mashed potatoes
  • ¼ cup milk
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped parsley (optional)
  • ½ tsp salt
  • ½ tsp black pepper

Coating

  • 1 egg (for coating)
  • ¾ cup breadcrumbs for coating
  • Oil spray


Instructions

  1. Sauté Aromatics: In a skillet over medium heat, melt the butter. Add the finely chopped onion and cook for 2 to 3 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds to release its aroma.
  2. Combine Ingredients: Add the cooked shredded chicken, mashed potatoes, and milk to the skillet. Stir everything together. Then mix in the breadcrumbs, grated Parmesan cheese, chopped parsley (if using), salt, and black pepper. Cook the mixture for 1 to 2 minutes until it thickens slightly. Remove from heat and allow it to cool.
  3. Shape Croquettes: Once the mixture has cooled enough to handle, shape it into small logs or oval-shaped croquettes using your hands.
  4. Coat Croquettes: Beat the egg in a bowl. Dip each croquette first into the beaten egg, then coat it thoroughly with the ¾ cup of breadcrumbs.
  5. Preheat Air Fryer & Cook: Preheat the air fryer to 375°F (190°C). Lightly spray the croquettes with oil and arrange them in a single layer inside the air fryer basket. Air fry for 10 to 12 minutes, flipping the croquettes halfway through cooking, until they are golden brown and crispy on the outside.
  6. Serve: Let the croquettes cool slightly after cooking. Serve warm with your favorite dipping sauce for a tasty appetizer or snack.
