Description

A moist and flavorful zucchini cornbread that combines the sweetness of cornmeal with fresh zucchini, offering a delicious twist on classic cornbread. Perfect as a side dish or a hearty snack, this recipe is easy to make and bakes to a golden perfection.

Ingredients

Dry Ingredients

  • 1 Cup Yellow Cornmeal
  • 1 Cup All-purpose flour
  • 1/3 Cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 1/2 cup milk
  • 2 large eggs
  • 4 tablespoons butter, melted

Main Ingredient

  • 2 cups shredded zucchini

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C) and thoroughly grease a 9-inch baking pan. Set it aside for later use.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt to evenly combine all the dry elements.
  3. Add Wet Ingredients: Create a well in the center of the dry ingredients. Pour in the milk, eggs, and melted butter, then stir gently until just combined. Avoid overmixing to keep the bread tender.
  4. Incorporate Zucchini: Fold in the shredded zucchini until evenly distributed throughout the batter, being careful not to overmix to maintain a light texture.
  5. Transfer to Pan and Bake: Pour the batter into the prepared baking pan and place it in the preheated oven. Bake for about 30 minutes, or until the top turns golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Remove the cornbread from the oven and let it cool for 5 minutes. Serve warm for the best flavor and texture.

Notes

  • Make sure to shred the zucchini and squeeze out excess moisture to avoid soggy bread.
  • Do not overmix the batter to keep the cornbread light and tender.
  • You can substitute milk with a dairy-free alternative to make this recipe lactose-free.
  • Adding shredded cheese or herbs can enhance the flavor if desired.
  • Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
