Description

Whipped Pink Lemonade is a refreshing summer drink that combines tart lemon juice, sweet raspberries, and creamy whipped topping for a fun, vibrant, and creamy treat. Its eye-catching pink hue and luscious, frothy layer make it perfect for impressing guests at any gathering or just cooling down on a hot day.

Ingredients

Lemonade Base

  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup fresh raspberries (plus extra for garnish)

Whipped Topping

  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract

For Serving

  • Ice cubes
  • Fresh raspberries (for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Prepare the Lemonade Mixture: In a blender, combine the fresh lemon juice, granulated sugar, raspberries, and 1 cup of cold water. Blend until smooth and the raspberries are fully broken down, creating a vibrant pink mixture.
  2. Strain and Mix: Strain the blended mixture through a fine mesh sieve into a large pitcher to remove seeds and pulp. Use the back of a spoon to help push the liquid through. Add the remaining 3 cups of cold water to the pitcher, stir well, and taste. Adjust sweetness with more sugar if desired. Set aside.
  3. Whip the Cream: In a separate mixing bowl, pour in the heavy whipping cream and add the vanilla extract. Using an electric mixer on medium speed, whip until soft peaks form and the cream is light and airy.
  4. Make Whipped Pink Topping: Gently fold in about 1 cup of the prepared lemonade mixture into the whipped cream. Stir carefully until the cream is evenly tinted pink and well combined.
  5. Assemble the Drinks: Fill serving glasses with ice cubes. Pour the pink lemonade mixture into each glass, filling them about three-quarters of the way full.
  6. Add Whipped Topping: Spoon a generous dollop of the whipped pink cream topping onto each glass for a creamy, luscious float effect.
  7. Garnish and Serve: Finish each glass with a few fresh raspberries and a lemon slice on the rim. Serve immediately and enjoy your whipped pink lemonade!

Notes

  • Chill all ingredients before starting for an extra cold, refreshing drink.
  • Swap raspberries for strawberries for a twist on flavor and color.
  • Make the lemonade and whipped topping in advance and assemble just before serving for best texture.
  • For a lighter version, use whipped coconut cream instead of heavy cream.
  • Adjust sugar to taste or use a sugar substitute, if desired.
