Description
This Vegan Peanut Butter Mousse is a quick and creamy dessert that combines smooth silken tofu with rich peanut butter and a touch of sweetness. Topped with a luscious dark chocolate ganache made from full-fat coconut milk, this mousse is a decadent yet plant-based treat perfect for satisfying your chocolate and peanut butter cravings in just 10 minutes.
Ingredients
Mousse:
- 350 grams silken tofu
- 3-4 tbsp smooth peanut butter (to taste)
- 3-4 tbsp agave syrup (or maple syrup or powdered sugar to taste)
- 1 tsp vanilla paste or extract
- 1 pinch salt
Chocolate Ganache:
- 100 grams 70% dark chocolate (chips or chopped)
- 400 grams full-fat coconut milk (use the creamy part)
Instructions
- Blend the Mousse: Add silken tofu, peanut butter, agave syrup, vanilla extract, and a pinch of salt into a blender. Blend until completely smooth. Taste and adjust sweetness or peanut butter quantity to your preference.
- Chill the Mousse: Spoon the blended mousse mixture into ramekins or jars. Cover them and refrigerate while preparing the ganache to let the flavors meld and set slightly.
- Prepare the Ganache: Melt the dark chocolate using a microwave or double boiler (Bain Marie). Once melted, whisk in the creamy portion of the coconut milk until smooth and glossy. It’s okay if some liquid mixes in, but primarily use the thick cream for a rich texture.
- Assemble and Set: Pour the chocolate ganache evenly over the peanut butter mousse. Return the ramekins to the fridge and let them chill for at least 1 hour to allow the ganache to set and the mousse to firm up for perfect serving texture.
- Serve: Once set, serve chilled and enjoy the creamy, rich vegan peanut butter mousse topped with silky chocolate ganache.
Notes
- Silken tofu is key for achieving the smooth mousse texture; use fresh and well-drained if needed.
- You can swap agave syrup for maple syrup or powdered sugar depending on your sweetener preference.
- The ganache uses the creamy part of canned coconut milk; refrigerate the can beforehand to separate cream from liquid easily.
- Adjust the amount of peanut butter and sweetener based on your taste for a more or less intense flavor.
- Store leftovers covered in the fridge and consume within 2 days for best freshness.
