Description

Creamy Tuscan butter beans cooked in a rich Marry Me sauce with sundried tomatoes, parmesan, and kale. This flavorful dish is perfect for a cozy dinner at home.


Ingredients

Butter Beans:

  • 2 (15 oz.) cans butter beans, drained + rinsed
  • 2 Tbsps unsalted butter
  • 4 garlic cloves, minced
  • ½ cup organic sundried tomatoes
  • 1 tablespoon organic tomato paste
  • 2 Tbsps Tuscan Marry Me blend
  • 1 teaspoon sea salt
  • 1 cup organic heavy cream
  • ½ cup organic vegetable stock
  • 3 Tbsps white cooking wine
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • ½ cup freshly-grated parmesan

Instructions

  1. TO MAKE THE CREAMY TUSCAN ‘MARRY ME’ SAUCE: In a medium skillet, melt butter. Add garlic, tuscan blend, salt, sundried tomatoes, and tomato paste. Stir. Slowly add heavy cream, veggie stock, lemon juice, white wine. Whisk in parmesan until melted. Add kale and drained butter beans. Simmer.
  2. To serve: Enjoy with favorite side. Garnish with parmesan.

Notes

  • Leftovers can be refrigerated for up to 3-4 days. Reheat with a bit of cream or stock.
  • Add spinach, broccolini, or asparagus for extra flavor.
  • Store leftover tuscan blend seasoning for later use.
  • For dairy-free option, use vegan butter, coconut milk, and dairy-free cheese.
