Ingredients
Syrup:
- 1 cup demerara sugar
- 1/2 cup water
Whipped Cream:
- 1 cup cold heavy cream
- 2 tablespoons pure maple syrup
- 1/2 teaspoon vanilla bean paste
Irish Coffee:
- 1 oz demerara syrup
- 1 1/2 oz Irish whiskey
- 6 oz strong brewed coffee
- Whipped cream, for topping
- Freshly grated nutmeg, for garnish
Instructions
- Make the Syrup: Combine the demerara sugar and water in a small saucepan over low heat. Stir until the sugar dissolves completely. Remove from the heat and allow the syrup to cool to room temperature. Store it in an airtight container in the refrigerator for up to 1 month.
- Prepare the Whipped Cream: While the coffee is brewing, combine the cold heavy cream, pure maple syrup, and vanilla bean paste in a mixing bowl. Whisk gently until the cream thickens just before forming soft peaks, ensuring it will blend well rather than simply float on top.
- Assemble the Irish Coffee: Pour 1 oz (2 tablespoons) of the prepared demerara syrup into the bottom of an Irish coffee mug. Add 1 1/2 oz of Irish whiskey and a small amount of freshly brewed coffee. Stir well to combine.
- Add Coffee: Pour more coffee into the mug, filling it until about 1/2 inch below the rim, leaving space for the cream topping.
- Top with Whipped Cream and Nutmeg: Gently spoon the lightly whipped cream over the coffee mixture, creating a creamy layer on top. Finish with a sprinkle of freshly grated nutmeg for added aroma and flavor.
