Description

This creamy chickpea salad is a quick and flavorful dish combining tender chickpeas with crisp vegetables and a spicy, tangy sriracha dressing. Perfect as a light lunch or side, this recipe comes together in just 15 minutes and offers a delicious balance of creamy, spicy, and fresh flavors.

Ingredients

Chickpea Salad

  • 15 ounces canned chickpeas, rinsed and drained
  • 1 shallot, diced small (about the size of the chickpeas)
  • 1/2 red bell pepper, diced small
  • 1 celery spear, diced small
  • 2 bunches green onion, diced small

Creamy Sriracha Dressing

  • 1/2 juice of lemon
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tbsp sriracha (start with 1/2 and adjust to taste)
  • 1 tsp kosher salt (or to taste)
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp sweet paprika
  • 2 swirls fresh ground black pepper

Instructions

  1. Add Chickpeas: Add the rinsed and drained canned chickpeas into a large mixing bowl to serve as the base of your salad.
  2. Prepare Vegetables: Chop the shallot, red bell pepper, celery, and green onions all to a similar small size, roughly matching the size of the chickpeas, then add them to the bowl with the chickpeas.
  3. Make Dressing: In a separate small bowl, combine lemon juice, sour cream, mayonnaise, sriracha, kosher salt, garlic powder, onion powder, sweet paprika, and freshly ground black pepper. Mix everything together thoroughly until smooth and well blended.
  4. Combine Salad and Dressing: Pour the creamy sriracha dressing over the chickpeas and vegetables in the large bowl, then mix everything well to evenly coat the salad with the dressing.
  5. Serve or Store: Serve the salad immediately for best flavor or cover and refrigerate it for up to 3 days, allowing the flavors to meld.

Notes

  • Adjust sriracha quantity based on your preferred spice level, starting with half the amount and increasing to taste.
  • For a dairy-free version, substitute sour cream and mayonnaise with suitable vegan alternatives.
  • This salad can be enjoyed as a main dish for a light meal or as a side for grilled meats or sandwiches.
  • Chilling the salad for an hour enhances the flavors and melds the spices.
  • Make sure to rinse and drain chickpeas well to reduce sodium and improve texture.
