Ingredients
For Tamarind Pulp
- 25 grams seedless tamarind (about ⅓ cup)
- ¾ cup water
Other Ingredients
- 1 liter Mango Nectar or Mango juice
- 1½ tablespoons Tajin Clasico (or homemade chili-lime seasoning)
- ½ teaspoon black salt
- ½ teaspoon roasted cumin powder
- 4 tablespoons prepared tamarind pulp (from above or store-bought)
- 1 liter club soda or sparkling water
- Ice cubes, as needed
- Fresh mint leaves, for serving
Instructions
- Make Tamarind Pulp — Combine seedless tamarind and ¾ cup water in a small pot. Boil over medium heat for about 5 minutes, or until tamarind softens and starts to break down. Turn off the heat and let it cool completely.
- Blend and Strain — Once cooled, transfer the softened tamarind and water to a blender or use an immersion blender to make a smooth paste. Strain the mixture through a fine mesh sieve or strainer to remove solids, reserving the smooth tamarind pulp. Set aside. (Skip these steps if using store-bought tamarind paste.)
- Mix Mango-Tamarind Base — In a large mixing bowl or beverage pitcher, combine the mango nectar, Tajin, black salt, roasted cumin powder, and 4 tablespoons of tamarind pulp. Mix thoroughly until evenly blended. Chill the mixture for at least 2 hours for best flavor.
- Assemble the Mocktails — When ready to serve, fill an 8-oz glass with ice cubes and a few fresh mint leaves. Pour the chilled mango-tamarind base to fill half the glass, then top up with club soda or sparkling water. Stir gently to mix.
- Garnish & Serve — Optionally, coat the rim of each glass with Tajin or black salt for a festive touch. Serve immediately while cold and fizzy.
