Ingredients

Buttercream Base

  • 2 cups unsalted butter (room temperature)
  • 1.5 pounds confectioners’ sugar (24 ounces or about 5.5 cups, sifted)
  • 2 teaspoons pure vanilla extract

Strawberry Puree

  • 6-8 medium fresh strawberries (pureed, about 4-5 tablespoons of puree)


Instructions

  1. Beat the Butter: In the bowl of a stand mixer fitted with the paddle attachment, beat the room-temperature unsalted butter on medium-high speed for about 5 minutes until creamy and smooth.
  2. Add Sugar and Flavorings: Lower the mixer speed to low and gradually add the sifted confectioners’ sugar, mixing until fully incorporated. Then add the pure vanilla extract and 3 tablespoons of fresh strawberry puree, mixing until combined.
  3. Adjust Strawberry Flavor: Turn off the mixer and taste the frosting. Gradually add the remaining 2 tablespoons of strawberry puree to reach your preferred strawberry intensity. Be careful not to exceed 5 tablespoons total to avoid thinning out the frosting.
  4. Whip Until Fluffy: Increase the mixer speed back to medium-high and beat the mixture for 3 to 4 minutes until the frosting is light, airy, and fluffy.
  5. Use the Frosting: Spread or pipe the strawberry frosting onto your cake or cupcakes as desired for a beautiful, flavorful finish.
