Ingredients
Wet Ingredients
- 1 cup peaches, peeled and diced
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Spray three mini loaf pans or one large loaf pan with nonstick cooking spray to prevent sticking.
- Mix Wet Ingredients: In a medium bowl, combine the diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Stir together until evenly blended.
- Add Dry Ingredients: Add the flour, baking soda, and salt to the bowl with the wet mixture. Gently fold the dry ingredients into the wet ingredients, mixing only until just combined. Be careful not to overmix, as this can affect the bread’s texture.
- Fill Pans: Evenly pour or spoon the batter into your prepared loaf pans.
- Bake: Place the pans in your preheated oven. Bake for 25-30 minutes for mini loaves or 50-55 minutes for a large loaf, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool and Serve: Remove pans from the oven and allow the bread to cool slightly before removing from pans. Slice and enjoy warm or at room temperature.
Notes
- You can use fresh or canned peaches; just drain canned peaches well.
- Don’t overmix the batter to keep the bread light and fluffy.
- Try adding cinnamon or nutmeg for extra warmth.
- Store leftovers tightly wrapped at room temperature for up to 3 days or freeze for longer storage.
- Delicious served plain, with a smear of butter, or a simple glaze on top.
