Ingredients
Steak Bites
- 3 pounds sirloin steak, cut into bite-sized pieces
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 tablespoon vegetable oil (more as needed)
Flavor Base
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock
- 1 ounce packet au jus gravy mix
Finishing Touch
- 4 tablespoons unsalted butter, thinly sliced
Instructions
- Season the Steak: Place the bite-sized sirloin steak pieces into a large bowl. Sprinkle with kosher salt and black pepper, tossing everything together to ensure even seasoning.
- Sear the Meat: Heat a large skillet over medium-high heat and add the vegetable oil. Once the oil is hot, sear the steak pieces in batches, browning them on all sides. Don’t cook them through—just develop some color for extra flavor. Add more oil to the pan if necessary.
- Prepare the Slow Cooker: After all the steak is seared, transfer it to a 6-quart slow cooker. Add in the thinly sliced onion and garlic, gently stirring to combine all the flavors.
- Add Liquids & Seasonings: Pour the unsalted beef stock over the steak and vegetables. Sprinkle the au jus gravy mix evenly over the top. Arrange the slices of unsalted butter on top of everything in the slow cooker.
- Slow Cook: Cover the slow cooker and cook on high for 3-4 hours or on low for 6-8 hours. Stir once an hour if you’re able to, so all the flavors marry well.
- Serve: Once the steak bites are fork-tender, serve them hot. They’re delicious over mashed potatoes, egg noodles, or rice.
