Ingredients

Meat and Veggies

  • 3 bacon strips
  • 1 medium onion, finely chopped
  • 1/2 large red bell pepper, finely chopped
  • 1/2 cup green onion, chopped

Dairy and Eggs

  • 1 1/2 cups cottage cheese
  • 3 large eggs
  • 1/2 cup Parmesan cheese, grated (plus more for topping)

Dry Ingredients

  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups plus 2 tablespoons all-purpose flour


Instructions

  1. Preheat oven and prepare baking sheet: Set your oven to 425°F (218°C). Line a large baking sheet with parchment paper to prevent sticking and set aside for later use.
  2. Cook the bacon: Heat a skillet over medium-high heat. Add the bacon strips and fry them until crispy on both sides. Once done, transfer the bacon to a plate to cool.
  3. Sauté onion and bell pepper: In the same skillet, add the finely chopped onion and red bell pepper. Fry until they turn golden brown, stirring occasionally to cook evenly. Then transfer these cooked vegetables to a large mixing bowl.
  4. Prepare the biscuit dough: Chop the cooled bacon and add to the bowl with the cooked veggies. Add the cottage cheese, eggs, grated Parmesan cheese, chopped green onion, baking powder, salt, and pepper. Whisk everything together until well combined. Pour in the flour and stir with a spatula until a thick dough forms.
  5. Shape the biscuits: Using a 1/3 cup measuring cup, scoop and pack the dough firmly, then place each portion onto the prepared baking sheet, leaving space between biscuits as they will spread slightly. If needed, use a second baking sheet. Sprinkle each biscuit with a little additional Parmesan cheese on top.
  6. Bake the biscuits: Place the baking sheet(s) in the preheated oven and bake for 20 minutes or until the biscuits are cooked through and have a slightly golden-brown color. Be careful not to overbake to keep them moist.
