Description

Philly Cheesesteak Bowls offer a delicious and quick twist on the classic sandwich, featuring tender ribeye steak strips sautéed with garlic, onions, bell peppers, and mushrooms, topped with melted provolone cheese. This low-carb, skillet and broiler-prepared meal is perfect for a satisfying 30-minute dinner for two.


Ingredients

Steak

  • ½ pound ribeye steak, sliced into -inch-thick strips
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • 2 tablespoons light olive oil, divided

Vegetables & Cheese

  • 1 medium garlic clove, minced
  • ½ small onion, cut in half and sliced thin
  • 1 medium green bell pepper, stemmed, seeded and cut into bite-sized pieces
  • 2 ounces white button mushrooms, sliced
  • Four 1-ounce slices Provolone cheese


Instructions

  1. Season and Cook the Steak: Season the ribeye strips evenly with salt and freshly ground black pepper. Heat 1 tablespoon of olive oil in an oven-safe 10-inch skillet over medium-high heat. Add the steak strips and sauté until fully cooked through, about 4 to 6 minutes. Once done, remove the steak from the skillet and set aside.
  2. Sauté the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook while stirring for about 30 seconds until fragrant. Then add the sliced onion, green bell pepper pieces, and sliced mushrooms. Continue sautéing until the vegetables become tender, which will take about 8 to 10 minutes. Return the cooked steak to the skillet and season with additional salt and pepper to taste.
  3. Melt the Cheese: Turn off the heat on the stovetop. Arrange the provolone cheese slices evenly over the beef and vegetable mixture. Transfer the skillet to the oven’s broiler and broil just long enough to brown and melt the cheese, about 2 to 4 minutes. Keep a close watch to prevent burning.
  4. Serve: Once the cheese is melted and bubbly, carefully remove the skillet from the oven. Divide the cheesy steak and vegetable mixture into two bowls and serve immediately for a satisfying meal.
