Description

This Persian Chicken recipe combines a harmonious blend of spices with tender chicken pieces, dried fruits, and crunchy almonds, creating a dish bursting with flavor. Perfect for a special dinner or gathering.


Ingredients

Chicken:

  • 4 pieces of chicken (legs or thighs preferred)

Seasoning:

  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon black pepper
  • 1 tablespoon salt (adjust to taste)
  • 2 tablespoons fresh lemon juice

Additional Ingredients:

  • 1 cup chicken broth
  • 1 cup dried apricots or prunes (or a mix)
  • ½ cup toasted almond slivers
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prep the Chicken: Rinse the chicken pieces under cold water and pat them dry with paper towels.
  2. Cook the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add Garlic and Spices: Stir in garlic, turmeric, cumin, cinnamon, black pepper, and salt. Cook until fragrant.
  4. Brown the Chicken: Sear the chicken pieces until golden brown on each side.
  5. Deglaze with Lemon Juice: Stir in lemon juice, scraping the bottom of the pan.
  6. Add Broth and Dried Fruits: Pour in chicken broth and add dried fruits. Simmer.
  7. Cover and Cook: Reduce heat, cover, and cook for 40 minutes.
  8. Finish with Almonds: Stir in almond slivers and cook until sauce thickens.
  9. Rest Before Serving: Let the chicken rest for 10 minutes.
  10. Garnish and Serve: Garnish with parsley or cilantro before serving.
