Ingredients
Yogurt Mixture
- 1 cup thick yogurt (Greek or coconut yogurt work best)
- 1/4 cup powdered peanut butter (can substitute peanut butter or vanilla flavored protein powder)
- 3 tbsp peanut butter
- 3-4 tbsp maple syrup or honey
- 1 tsp vanilla extract
- Generous pinch of sea salt
Date Center
- Dates (ripped in half and rolled into balls or chopped and folded in)
Chocolate Topping
- 1 cup chopped chocolate or chocolate chips
- 1 tsp coconut oil
Instructions
- Mix Yogurt Ingredients: In a large bowl, combine the thick yogurt, powdered peanut butter, peanut butter, maple syrup or honey, vanilla extract, and sea salt. Mix thoroughly until the mixture is completely smooth. Taste the mixture and add extra maple syrup if desired for sweetness.
- Prepare Dates: Open the dates and remove the pits. Rip each date in half and roll each half into a small ball. Alternatively, chop the dates and fold them into the yogurt mixture for a different texture, but the ball form provides a chewy, caramel-like center.
- Fill Muffin Tin: Using a mini muffin tin, divide the yogurt mixture by filling each cavity about one-third full. Use a tablespoon-sized cookie scoop for ease. Place a date ball into the center of each filled cavity and gently press it slightly into the mixture.
- Prepare Chocolate Topping: In a small bowl, combine the chopped chocolate or chocolate chips with the coconut oil. Heat the mixture in the microwave in 30-second increments, stirring well between each, until it is fully melted and smooth. Spoon a layer of melted chocolate on top of each yogurt-filled cavity, covering the yogurt and date. Optionally, top each with chopped peanuts for added texture.
- Freeze to Set: Place the muffin tin in the freezer for 2-3 hours to allow the bites to firm up completely. Once firm, optionally sprinkle with sea salt. Carefully remove each bite from the tin or mold and store them in an airtight container in the freezer until ready to eat.
