Description

These Oven Roasted Potatoes are a simple yet flavorful side dish that pairs well with almost any meal. Crispy on the outside and fluffy on the inside, these potatoes are seasoned with garlic, herbs, and Parmesan cheese for a delicious twist.

Ingredients

Potatoes:

  • 1 1/2 pounds baby potatoes, halved

Seasoning:

  • 1/4 cup olive oil
  • 2 teaspoons minced garlic
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1/4 cup finely grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 400 degrees F. Line a sheet pan with foil and coat with cooking spray.
  2. Prepare the potatoes: In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and Parmesan cheese until evenly coated.
  3. Bake: Spread potatoes in a single layer on the baking sheet. Bake for 35-40 minutes until golden brown and fork-tender.
  4. Serve: Sprinkle with parsley before serving.

Notes

  • If you don’t have baby potatoes, use large red potatoes cut into 1-inch pieces.
  • For best results, use freshly grated Parmesan cheese.
