These No Bake Matcha Cookie Dough Energy Bites are a quick, wholesome, and energizing snack. Made with almond flour, oat flour, protein powder, and flax, they’re packed with plant-based protein, good fats, and a gentle caffeine boost from matcha. Sweetened naturally with maple syrup and held together by creamy cashew butter, these bites are the perfect grab-and-go treat for busy days or a nutritious snack between meals.


Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup oat flour*
  • 1/4 cup vanilla plant protein powder
  • 1/4 cup ground flax**
  • 1 tbsp matcha green tea powder
  • 1/4 tsp fine sea salt

Wet Ingredients

  • 1/2 cup cashew butter (or almond butter; avoid peanut butter)
  • 1/4 cup pure maple syrup
  • 1 tbsp water

Instructions

  1. Combine Dry Ingredients – In a medium mixing bowl, whisk together the almond flour, oat flour, vanilla plant protein powder, ground flax, matcha green tea powder, and fine sea salt until evenly mixed.
  2. Add Wet Ingredients – Add the cashew butter, pure maple syrup, and water to the dry ingredients. Use your hands to work everything together until well combined. The mixture should come together into a dough that’s easy to roll without crumbling. If the mixture is too dry and crumbly, add a little more water, one teaspoon at a time.
  3. Shape and Store – Roll the dough tightly into balls, about 1 tablespoon each (makes 18-20 bites). Store the energy bites in the refrigerator for up to one week, or freeze for longer storage.

Notes

  • *You can make your own oat flour by blending old-fashioned oats in a blender or Nutribullet until it reaches a fine, powdery consistency.
  • **If you don’t have ground flax or protein powder, substitute additional almond flour. Vanilla protein powder is sweet, so you may wish to increase the maple syrup if omitting it.
  • If omitting protein powder, add 1/2 teaspoon vanilla extract for extra flavor.
  • No matcha? Omit it and add mini chocolate chips for classic cookie dough bites.
