Description

These No-Bake Brownie Bites are irresistibly rich, chocolatey, and perfectly bite-sized treats. Made with heat-treated flour, creamy butter, and two types of sugar, these fudgy brownie bites are coated with melted German chocolate for a decadent finish, all without turning on your oven (except to heat treat the flour). Perfect for parties, holiday trays, or a quick chocolate fix, they’re easy to make and can be stored for days in the fridge or freezer.

Ingredients

Brownie Bite Dough

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened (1 stick)
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 cup mini chocolate chips

Coating

  • 8 ounces German sweet chocolate, chopped into pieces

Instructions

  1. Heat Treat the Flour: Preheat your oven to 350°F. Spread the flour over a baking sheet and bake for 5 minutes to kill any potential bacteria. Remove from the oven and allow it to cool completely before using.
  2. Cream Butter and Sugars: Using a hand or stand mixer, beat together the brown sugar, granulated sugar, and softened butter in a large mixing bowl until the mixture is light and well combined.
  3. Add Vanilla Extract: Add the vanilla extract to the mixture and mix until smooth and fragrant.
  4. Mix in Dry Ingredients: Add the heat-treated all-purpose flour and cocoa powder to the mixing bowl. Beat until incorporated and a soft, uniform dough forms.
  5. Fold in Chocolate Chips: Using a rubber spatula, gently fold in the mini chocolate chips so that they’re evenly distributed throughout the dough.
  6. Shape Brownie Bites: Roll the dough into 1-inch balls using your hands or a cookie scoop. Place the balls on a baking sheet lined with parchment paper.
  7. Chill the Dough Balls: Refrigerate the shaped brownie bites for about 20 minutes to firm them up, making them easier to dip in chocolate.
  8. Melt the Chocolate: Melt the chopped German sweet chocolate in a double boiler or microwave (using 20-second intervals, stirring between each until smooth).
  9. Coat the Brownie Bites: Dip each chilled brownie bite into the melted chocolate, allowing the excess to drip off. Return each dipped bite to the parchment-lined baking sheet.
  10. Set and Serve: Let the chocolate coating set fully. You can speed this up by chilling them briefly in the fridge. Serve once set.

Notes

  • Always heat treat the flour to remove any risk of harmful bacteria. You can bake in the oven or microwave it until it reaches at least 160°F.
  • If using the microwave, heat the flour for about 1 minute and 15 seconds, stirring every 15 seconds to ensure even heating.
  • Store brownie bites in an airtight container at room temperature for 5-7 days, in the fridge for up to 2 weeks, or freeze for up to 3 months.
