Ingredients

Pasta

  • 8 ounces uncooked pasta

Sauce

  • 2 tablespoons butter
  • 1/2 tablespoon flour
  • 3-4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/3 cup dry white wine or chicken broth
  • 1 cup heavy/whipping cream
  • 1/3 cup sun-dried tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups cooked or rotisserie chicken, shredded
  • 1/3 cup freshly grated parmesan cheese, plus more for serving
  • 1 small handful fresh basil, torn or chopped
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta: Boil a salted pot of water and cook the pasta al dente according to package directions, typically around 8-10 minutes. Reserve some pasta water before draining.
  2. Make the roux: While the pasta cooks and is about 10 minutes away from done, melt butter in a skillet over medium heat. Sprinkle flour in and cook for about one minute, stirring often to avoid lumps and cook out the raw flour taste.
  3. Add flavor bases: Stir in minced garlic, tomato paste, and add the white wine or chicken broth. Stir well and let the mixture bubble for about one minute to reduce and meld flavors.
  4. Create the sauce: Whisk in the heavy cream until smooth. Add sun-dried tomatoes, dried oregano, crushed red pepper flakes, and shredded chicken. Cook for a few minutes, stirring occasionally, until the sauce thickens to your preference.
  5. Finish the sauce: Stir in freshly grated parmesan cheese and chopped basil. Remove the skillet from heat. Season generously with salt and pepper to taste.
  6. Combine pasta and sauce: Add the drained pasta directly to the skillet with the sauce. Toss well to coat evenly. If the sauce is too thick, add a splash of reserved pasta water to loosen it. Serve immediately, topped with additional parmesan cheese if desired.
