Description

This refreshing Lemon Thyme Mocktail combines bright citrus with aromatic thyme for a sophisticated yet simple non-alcoholic drink. Naturally sweetened with maple syrup and balanced by coconut water, it’s a perfect choice for warm weather, brunches, or anytime you want a rejuvenating sip with a little flair.


Ingredients

Main Ingredients

  • 1 lemon (for juice, zest, and wedges)
  • 1 teaspoon pure maple syrup
  • 60 mL coconut water
  • Soda water, to top
  • 1 sprig thyme (+ extra for garnish)

For Garnish

  • Lemon juice (from half of the lemon)
  • Zest of 1 lemon
  • Ice, as needed

Instructions

  1. Prepare the Glass Garnish: Zest a lemon into a shallow dish. Slice the lemon in half and squeeze some juice from one half into a small bowl. Brush a little lemon juice onto the side of a glass tumbler using a pastry brush, then roll the glass in lemon zest so it coats the side. Set aside.
  2. Muddle the Lemon and Thyme: Slice the remaining half of the lemon into two wedges. Add the wedges and a sprig of thyme to a cocktail shaker. Use a muddling stick to press and muddle the flavors together thoroughly.
  3. Shake the Mocktail: Add the coconut water and maple syrup to the shaker. Secure the lid and shake well until the mixture is well combined and fragrant.
  4. Assemble the Drink: Fill the prepared glass halfway with ice. Add a fresh lemon slice and a sprig of thyme for added aroma.
  5. Strain and Top: Strain the lemon-thyme mixture into the prepared glass through a fine mesh strainer to catch seeds and solids. Top off the drink with soda water to your liking.
  6. Serve: Serve immediately for best flavor and fizz, and enjoy right away.

Notes

  • Tumbler Instructions: If you don’t have a cocktail shaker, muddle the lemon wedges and thyme in a tumbler, strain into the garnished glass, then add coconut water and maple syrup. Stir, top with ice, lemon, thyme and soda water.
  • Adjust Sweetness: The drink is very lemony and just slightly sweet—add an extra teaspoon of maple syrup if you prefer a sweeter mocktail.
  • Make It Ahead: Prepare the lemon-thyme-coconut mixture in advance and keep chilled (without soda water and ice), then assemble and top with soda water when ready to serve.
