Ingredients

Sauce

  • 3 tablespoons mayonnaise
  • 1 tablespoon keto ketchup (or other keto-friendly ketchup)
  • 2 tablespoons minced dill pickles

Sandwich

  • 4 chaffles
  • 1/4 pound corned beef (sliced thin)
  • 1 cup sauerkraut
  • 2 ounces Swiss cheese
  • 2 tablespoons butter


Instructions

  1. Prepare the sauce: In a small bowl, combine mayonnaise, keto ketchup, and minced dill pickles. Mix well until fully blended to create a tangy and creamy spread.
  2. Assemble the sandwiches: Spread the prepared sauce evenly over all four chaffles. Divide the thinly sliced corned beef evenly on two of the chaffles.
  3. Add toppings: On top of the corned beef, layer half of the Swiss cheese and the sauerkraut, distributing them evenly.
  4. Complete the sandwich: Place the remaining two chaffles on top of the sauerkraut, sauce side down, to form a sandwich.
