Ingredients

- 3 tablespoons mayonnaise

- 2 tablespoons minced dill pickles
Sandwich
- 4 chaffles
- 1/4 pound corned beef (sliced thin)
- 1 cup sauerkraut
- 2 ounces Swiss cheese
- 2 tablespoons butter
Instructions
- Prepare the sauce: In a small bowl, combine mayonnaise, keto ketchup, and minced dill pickles. Mix well until fully blended to create a tangy and creamy spread.
- Assemble the sandwiches: Spread the prepared sauce evenly over all four chaffles. Divide the thinly sliced corned beef evenly on two of the chaffles.
- Add toppings: On top of the corned beef, layer half of the Swiss cheese and the sauerkraut, distributing them evenly.
- Complete the sandwich: Place the remaining two chaffles on top of the sauerkraut, sauce side down, to form a sandwich.
- Heat the skillet: Melt butter in a large skillet over medium heat to prepare for grilling the sandwiches.
- Cook the sandwiches: Place the assembled sandwiches in the skillet. Cook for 4 minutes on one side until golden and crispy, then flip and cook an additional 4 minutes or until the cheese has melted thoroughly and the sandwiches are heated through.
