Description

A zesty and flavorful green tomato salsa recipe that is perfect for canning and enjoying all year round. This salsa is made with fresh green tomatoes, bell peppers, onions, and a blend of spices for a delicious twist on traditional salsa.


Ingredients

Produce:

  • 12 cups green tomatoes, chopped
  • 2 green bell peppers, chopped
  • 2 yellow or red sweet peppers, chopped
  • 3 onions, chopped
  • 56 hot peppers, optional

Additional Ingredients:

  • 1.5 cups white vinegar
  • 1 cup lemon juice
  • 1/4 cup sugar
  • 4 tablespoons garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 2 teaspoons pepper
  • 1/4 tablespoon cayenne pepper, optional

Instructions

  1. Step 1: Chop

    Collect your produce and ingredients. Using a food processor, chop onions, tomatoes, and peppers. In a large pan, add all ingredients and mix well.

  2. Step 2: Simmer

    Simmer salsa on low/medium heat for 30 minutes, stirring well. Once done, ladle into prepared jars, place lids and bands, ready for processing.

  3. Step 3: Can

    Process in a hot boiling water bath for 20 minutes. Remove from water, allow to cool, and store for up to a year.
