- 3 lbs Beef Round (trimmed of silver skin and fat)
Marinade
- 1 cup Soy Sauce (low sodium)
- 2 tbsp Minced Garlic
- 1.5 tbsp BLK Hot Sauce
- 1.5 tbsp Big Bad BBQ Ale Rub
- 1.5 tbsp Brown Sugar
- 1.25 tbsp Honey
- 1 tbsp Black Garlic Sauce
- 1 tsp Sesame Seeds
Instructions
- Prepare the marinade: In a bowl, combine soy sauce, minced garlic, hot sauce, BBQ rub, brown sugar, honey, black garlic sauce, and sesame seeds. Mix thoroughly to create a consistent marinade and set aside.
- Slice the beef: Cut the beef round in half lengthwise, then slice thinly to create jerky strips. Use a mallet to flatten each piece for even thickness.
- Marinate the beef: Place the flattened beef strips into a food-safe bag or bowl. Pour the marinade over the beef and mix well to ensure each piece is coated. Refrigerate for at least 4 hours, preferably overnight, to allow flavors to penetrate.
- Preheat the grill: Set up your Oklahoma Joe’s Judge Charcoal grill for indirect cooking at 175°F, preparing it as a smoker.
- Arrange the beef on a mesh tray: Remove the beef from the marinade and lay the strips evenly across a mesh tray, allowing air circulation for proper smoking.
- Smoke the beef: Place the tray in the smoker and cook for 4-5 hours, or until the jerky is firm and does not bend when lifted.
- Glaze with honey: About 10 minutes before the jerky is done, brush additional honey over the strips and continue smoking to add a sweet glaze.
- Cool and serve: Remove the jerky once done and let it cool for 2-3 minutes before enjoying.
