Chicken
- 1 lb / 500g chicken breast (2 pieces)
- Salt and pepper, to taste
- 1/4 cup / 35 g flour (any, for coating)
Cooking
- 1 1/2 tbsp butter
- 1 tbsp olive oil
- 1 garlic clove, minced
- 3/4 cup / 185 ml chicken broth / stock
- 1/4 cup / 85 g honey
- 1/4 cup / 60 ml lemon juice (fresh)
- 1 tsp soy sauce
- 2 tbsp water
- Lemon slices (for garnish)
- Finely chopped parsley (for garnish)
Instructions
- Prepare Chicken: Slice each chicken breast horizontally to form 4 steaks in total. Optionally, pound each piece to an even thickness of about 1cm (2/5″) to ensure uniform cooking.
- Season and Coat: Generously season both sides of the chicken steaks with salt and pepper. Place flour in a shallow dish and coat each chicken piece evenly with flour, shaking off any excess.
- Flour Mixture: Take 1 teaspoon of the reserved flour and mix it with 2 tablespoons of water. Set this mixture aside; it will thicken the sauce later.
- Sear Chicken: Heat butter and olive oil together in a skillet over medium-high heat until the butter is melted and hot. Add the chicken steaks and cook for about 2 minutes on each side or until golden brown. Once cooked, transfer the chicken to a plate to rest.
- Prepare Sauce Base: In the same skillet, add the minced garlic and stir for about 20 seconds until golden and fragrant. Pour in the chicken broth and bring to a simmer, scraping the brown bits from the bottom of the pan to incorporate maximum flavor into the sauce.
- Make Honey Lemon Sauce: Stir in the honey, fresh lemon juice, soy sauce, and the flour-water mixture prepared earlier. Mix well and let the sauce simmer for 2 to 3 minutes, allowing it to thicken into a shiny syrup. Season the sauce with salt and pepper to taste.
- Serve: You can either pour the sauce directly over the rested chicken breasts and garnish with finely chopped parsley and lemon slices or return the chicken to the skillet for 30 seconds to reheat while turning to coat evenly in the sauce before serving.

- For even cooking, pounding chicken to an even thickness is recommended but optional.
