Ingredients
For the Salmon
- 1 ½ lb salmon, skin removed and cut into 1-inch cubes
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¾ teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon olive oil (for seasoning)
For Cooking
- 2 tablespoons olive oil (for skillet)
For the Sauce
- 2 teaspoons garlic, minced
- 1 teaspoon ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- ¼ cup honey
For Garnish
- 2 teaspoons sesame seeds
- 2 teaspoons chopped chives
Instructions
- Prepare the Salmon: Pat dry the salmon cubes thoroughly with a paper towel to help the seasoning stick and ensure a crispy exterior. Place the salmon in a bowl and season with paprika, garlic powder, onion powder, salt, and black pepper. Drizzle about one tablespoon of olive oil over the cubes, then gently massage the seasoning mix into the salmon so every piece is well coated.
- Cook the Salmon: Heat a heavy skillet over medium-high heat and add one tablespoon of olive oil. Arrange the seasoned salmon cubes in a single layer so they sear evenly. Cook for 4–5 minutes, flipping them often with tongs or a spatula, until the salmon is golden and crispy on all sides. Once cooked, transfer the salmon cubes to a plate. Repeat with any remaining salmon, adding more oil if needed.
- Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and grated ginger, and sauté for about one minute until fragrant but not browned.
- Simmer the Honey Garlic Sauce: Pour in the soy sauce, rice vinegar, and honey. Stir to combine and bring the mixture to a simmer. Let it cook for 3–5 minutes, allowing the sauce to thicken and become glossy.
- Combine Salmon and Sauce: Return the crispy salmon cubes to the skillet, tossing to coat the pieces evenly in the sticky honey garlic sauce. Cook for 1–2 minutes more, just until the salmon is heated through and well lacquered in the sauce. Taste and adjust seasonings, if needed.
- Serve: Transfer the honey garlic salmon bites to a serving platter or over cooked rice. Garnish generously with sesame seeds and chopped chives. Serve immediately and enjoy!
