Ingredients

Pasta:

  • 8 oz whole wheat penne or fettuccine

Chicken:

  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 lb boneless skinless chicken breasts, cubed
  • Salt and black pepper, to taste
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 tbsp whole wheat flour
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-fat milk (1% or 2%)
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups baby spinach (optional but recommended)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente and set aside.
  2. Season and Cook the Chicken: Season and cook cubed chicken until golden and cooked. Set aside.
  3. Build the Garlic Parmesan Sauce: Make a roux with garlic, flour, broth, and milk. Add yogurt and cheese.
