Instructions

  1. Preheat and Prepare Cauliflower: Place a large rimmed baking sheet on the center rack of the oven and preheat to 450ºF. Meanwhile, cut the cauliflower into small florets and transfer them to a large bowl.
  2. Toss With Seasonings: Add olive oil, paprika, kosher salt, and cracked black pepper to the cauliflower florets and toss well to coat evenly.
  3. Roast Cauliflower: Spread the florets out in a single layer on the preheated baking sheet, avoiding overcrowding to ensure even roasting. Roast for 20 to 25 minutes, tossing once halfway through, until the cauliflower is tender and lightly charred on the edges.
  4. Add Garlic and Parmesan: Sprinkle the grated Parmesan cheese and minced garlic evenly over the roasted cauliflower, then return the baking sheet to the oven for an additional 5 minutes to melt the cheese and infuse the garlic flavor.
