Description

A simple and flavorful one-pan meal featuring juicy garlic Parmesan chicken thighs roasted with crispy golden baby potatoes, perfect for an easy weeknight dinner.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 ½ pounds baby potatoes, halved
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss halved potatoes with 1 tablespoon olive oil, half the minced garlic, half the Parmesan, oregano, thyme, salt, and pepper until evenly coated.
  3. Arrange potatoes in a single layer on a large baking sheet or roasting pan.
  4. Pat chicken thighs dry and rub with remaining olive oil, garlic, Parmesan, salt, and pepper.
  5. Place chicken thighs skin-side up on top of the potatoes.
  6. Roast for 35-40 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and tender.
  7. For extra crispiness, broil for 2-3 minutes, watching carefully to avoid burning.
  8. Garnish with fresh parsley before serving.

  • Swap baby potatoes for diced sweet potatoes for a sweeter flavor.
