Ingredients
Steak
- 2 lbs steak (filet, ribeye, sirloin, or your choice of cut)
- 2 tablespoons steak seasoning, divided (reserve 2 teaspoons for Alfredo sauce)
- 4-5 tablespoons avocado oil (for cooking and rubbing steak)
Pasta
- 1 lb dry fettuccini noodles
Garlic Butter
- 6 tablespoons butter, divided
- 10 cloves garlic, minced and divided
Alfredo Sauce
- 1.5 cups heavy cream
- 3/4 cup half and half
- 1/2 teaspoon freshly cracked black pepper
- 2 teaspoons reserved steak seasoning
- 2 green onions, diced (green and white parts)
- 1 cup freshly grated parmesan cheese
Instructions
- Prepare and season the steak: Cut the steak into 2-3 inch pieces. Rub the pieces with avocado oil and season liberally with the steak seasoning, reserving 2 teaspoons of seasoning for later use in the Alfredo sauce.
- Cook the steak: Heat a large skillet over medium-high heat and add 3 tablespoons of avocado oil. Cook the steak pieces for a few minutes on each side, flipping only once, adjusting cook time to your preferred doneness (see notes for steak temperature guidance). Once cooked, transfer the steak to a bowl and set aside.
- Make garlic butter and toss steak: Reduce skillet heat to low and add 2 tablespoons butter and 1 tablespoon minced garlic. Cook for about 1 minute until fragrant. Return the steak pieces to the skillet and toss them in the garlic butter. Remove from heat and transfer steak back to the bowl, covering with tented foil to keep warm.
- Cook pasta: Bring a pot of salted water to a boil and cook the fettuccini noodles according to package instructions until al dente. Drain and set aside.
- Prepare Alfredo sauce: In the same skillet with residual butter, add the remaining 4 tablespoons butter and remaining minced garlic. Sauté until fragrant, about 1 minute. Pour in the heavy cream, half and half, and add the reserved 2 teaspoons steak seasoning. Simmer the sauce for 3-4 minutes, allowing it to reduce slightly.
- Add parmesan and green onions: Stir in the freshly grated parmesan cheese, whisking continuously until the sauce is smooth and thickened. Remove from heat and fold in the diced green onions. Season with freshly cracked pepper and adjust seasoning to taste.
- Toss pasta and serve: Add the drained fettuccini noodles into the Alfredo sauce, tossing well to coat evenly. Plate the noodles and top with the garlic butter-coated steak bites. Garnish with extra green onions and parmesan cheese if desired. Serve immediately.
