Description

Ingredients

Dough:

  • 1/2 cup whole milk, lightly warmed
  • 2 tablespoons granulated sugar
  • 1 envelope (2 1/4 teaspoons) active dry yeast or instant yeast
  • 4 tablespoons unsalted butter, melted and lightly cooled
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 cups all purpose flour
  • 1 teaspoon kosher salt

Filling:

  • 4 heads of garlic, tops cut off to expose cloves
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, softened to room temperature
  • 1/4 cup chopped parsley
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 2 cups shredded mozzarella cheese, preferably thick-cut

Topping:

  • 2 tablespoons butter, melted
  • 1 tablespoon chopped parsley
  • 1 tablespoon freshly grated parmesan cheese, plus more for garnish
  • 1-2 teaspoons minced garlic


Instructions

  1. Activate Yeast: Warm milk to about 110°F, then in a stand mixer bowl combine milk, sugar, and sprinkle yeast over the top. Let sit undisturbed for 7-10 minutes until bubbly and fragrant if using active dry yeast. Skip waiting if using instant yeast.
  2. Prepare Dough: Add melted butter, egg, egg yolk, flour, and salt to the yeast mixture. Attach dough hook and knead on medium speed for 6-8 minutes until smooth. Add extra flour by tablespoon if sticky. Alternatively, knead by hand on floured surface for 10 minutes.
  3. First Rise: Shape dough into a ball and place in a greased bowl. Cover tightly with plastic wrap and a kitchen towel. Let rise in a warm spot until doubled in size, about 1-2 hours depending on temperature.
  4. Roast Garlic: Preheat oven to 400°F. Trim garlic heads to expose cloves, place in foil-lined baking vessel, drizzle with olive oil, and tent with foil. Roast 30-40 minutes until cloves are golden and tender. Cool, then extract cloves and set aside.
  5. Prepare Filling: Pulse roasted garlic cloves in food processor until smooth paste. Spread softened butter evenly over rolled out dough (13×8 inches). Spread garlic paste, sprinkle parsley, salt, and pepper, then top with shredded mozzarella. Gently pat cheese into mixture.
  6. Roll Dough: Roll dough tightly into a log starting from the long side with seam down. Stretch log gently if needed and pinch seam to seal. Optionally trim ends.
  7. Cut Rolls: Slice log into 9 equal pieces using a sharp knife or floss.
  8. Second Rise: Line a 9×9-inch baking dish with parchment, arrange rolls spaced evenly, cover tightly with plastic wrap and towel. Let rise for 1-2 hours until puffy.
  9. Bake Rolls: Preheat oven to 350°F. Remove cover and bake rolls for 30-35 minutes until lightly golden brown.
  10. Prepare Topping: Combine melted butter, parsley, parmesan, and minced garlic in a small bowl and stir well.
  11. Finish Rolls: Immediately brush baked rolls with garlic butter topping. Garnish with extra grated parmesan if desired. Serve warm and enjoy!
