Description

This Fruit Pizza recipe features a soft brown sugar cookie crust topped with a tangy cream cheese frosting and an array of fresh, colorful fruit. It’s a delightful, crowd-pleasing dessert that’s easy to customize with your favorite fruits, making it perfect for gatherings, summer parties, or a fun family treat.

Ingredients

Brown Sugar Cookie Crust:

  • 1 1/2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Cream Cheese Frosting:

  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt

Toppings:

  • Fresh strawberries
  • Blueberries
  • Raspberries
  • Blackberries
  • Any other desired fruit
  • Optional: Fresh honey, for drizzling

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a baking pan or pizza pan to prevent sticking.
  2. Prepare the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and light brown sugar together until light and fluffy. Add in the egg, vanilla extract, and almond extract, mixing until smooth.
  4. Combine and Form Dough: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If the dough is sticky, chill it for 10–15 minutes for easier handling.
  5. Shape and Bake the Crust: On a lightly floured surface, roll out the dough to fit your pan, about 1/4 to 1/2 inch thick. Press evenly into the pan, keeping your fingers damp to avoid sticking. Bake for 18–20 minutes, or until lightly golden. Let cool completely on a wire rack.
  6. Prepare the Cream Cheese Frosting: In a medium bowl, beat the low-fat cream cheese, sweetener (maple syrup, honey, or powdered sugar), vanilla extract, and a pinch of salt until smooth and fluffy.
  7. Frost the Cookie Crust: Once the crust is fully cool, spread an even layer of the cream cheese frosting all over the surface.
  8. Add Fruit Toppings: Arrange your choice of sliced fresh strawberries, blueberries, raspberries, blackberries, and other fruits on top of the frosting. For extra sweetness and shine, drizzle with honey if desired.
  9. Chill and Serve: Refrigerate for at least 20 minutes to set, then slice and serve chilled or at room temperature for best texture and flavor.

Notes

  • Chilling the dough before pressing into the pan makes it less sticky and easier to handle.
  • Keep your fingers slightly damp while pressing out the dough to prevent it from sticking to your hands.
  • Feel free to use your favorite seasonal fruits for the topping—kiwi, mango, or peaches all work well!
  • If using powdered sugar in the frosting, start with 1/2 cup and add more to taste if needed.
  • Fruit Pizza is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
