This French Onion Ground Beef and Rice Casserole is a hearty, comforting dish combining savory browned ground beef with browned onions, instant rice, and a rich blend of sour cream and mozzarella. Topped with crispy fried onions and fresh parsley, this casserole offers a delicious twist on classic flavors perfect for an easy family dinner.

Ingredients

Main Ingredients

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 oz onion soup mix
  • 2 cups instant white rice, uncooked
  • 2 cups beef broth

Toppings and Garnish

  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese
  • 1 cup crispy fried onions
  • fresh chopped parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Brown Ground Beef: In a large skillet over medium-high heat, add the ground beef and break it apart with a spatula or spoon, cooking until browned.
  3. Add Onions: Add the diced yellow onions to the skillet with the beef, stirring well. Continue cooking until the beef is fully browned and the onions have softened.
  4. Season Beef Mixture: Stir in salt, pepper, and the onion soup mix to evenly coat the ground beef and onion mixture. Remove the skillet from heat.
  5. Prepare Baking Dish: Lightly spray a 9 x 13 inch baking dish with cooking spray to prevent sticking.
  6. Layer Rice: Pour the uncooked instant white rice evenly into the bottom of the prepared baking dish.
  7. Add Ground Beef Mixture: Spoon the cooked ground beef and onion mixture over the rice in an even layer.
  8. Pour Broth: Evenly pour the beef broth over the ground beef and rice layers.
  9. Cover and Bake: Cover the baking dish tightly with aluminum foil and place it in the oven. Bake for 40 minutes.
  10. Remove Foil: After baking, carefully remove the dish from the oven and lift off the foil.
  11. Add Sour Cream: Spoon sour cream over the casserole’s surface and spread it evenly over the top.
  12. Top with Cheese: Sprinkle shredded mozzarella cheese evenly over the sour cream layer.
  13. Add Crispy Onions: Evenly sprinkle crispy fried onions over the top of the cheese.
  14. Finish Baking: Return the uncovered casserole to the oven and bake for an additional 10 to 15 minutes until the cheese is completely melted and bubbly.
  15. Rest: Remove the casserole from the oven and let it rest for a few minutes to set.
  16. Garnish and Serve: Sprinkle fresh chopped parsley on top for a fresh finish, then serve and enjoy your casserole.

Notes

  • Using instant rice allows the casserole to cook quickly without pre-cooking the rice.
  • For extra flavor, substitute part of the beef broth with a splash of red wine.
  • To make this dish lower fat, use reduced-fat sour cream and part-skim mozzarella.
  • Crispy fried onions add great texture but can be omitted or replaced with toasted breadcrumbs for a different crunch.
  • This casserole is easily doubled for larger gatherings using a bigger baking dish.
