Ingredients
For the Eggs
- 1 large egg
- 3/4 oz (20g) feta cheese, crumbled
- Cooking oil spray or olive oil spray
For Serving
- 1 small tortilla or 1 slice of toasted bread
- 1/4 avocado
- 1/2 teaspoon lemon juice

- Pinch dried oregano
- Pinch red pepper flakes

Instructions
- Prepare Pan and Feta: Lightly spray a small fry pan or skillet with cooking oil. Sprinkle the crumbled feta cheese in a circular pattern, covering the outer edges of the pan as well.
- Cook Feta: Heat the pan over medium heat. Allow the feta cheese to sizzle and melt for 1–2 minutes, until it begins to turn golden but does not burn.
- Add and Cook Egg: Gently crack the egg into the center of the pan, directly on top of the melted feta. Sprinkle dried oregano and red pepper flakes over the egg. Cook the egg until the whites are set and yolk is cooked to your liking.
- Prepare Tortilla or Toast: While the egg cooks, warm the tortilla or toast the bread using a gas stove, oven, or microwave. Smash the avocado over the top and add a squeeze of lemon juice.
- Serve: Once the egg is ready and the feta forms a golden, crispy crust, carefully lift it from the pan with a spatula and place on the prepared tortilla or toast.
- Garnish and Enjoy: Top with pickled onions and a drizzle of chili oil. Serve immediately for best crispiness.
