Ingredients

Broth

  • 8 cups chicken broth
  • 1 tbsp light soy sauce
  • 1 tsp chicken bouillon
  • 1 tsp salt
  • 1 tsp white pepper

Noodles

  • 1 package wonton noodles or egg noodles (14 oz)

Wontons and Vegetables

  • 25-30 wontons (homemade or store-bought)
  • handful of bok choy

Garnish

  • 2 green onions, chopped
  • optional: chili oil for drizzling


Instructions

  1. Prepare the broth: In a large pot, combine the chicken broth, chicken bouillon, light soy sauce, salt, and white pepper. Stir well and bring the mixture to a gentle simmer over medium heat.
  2. Cook the noodles: While the broth simmers, bring a separate pot of water to a rolling boil. Add the wonton or egg noodles and cook for 45 seconds, then drain and set aside to prevent overcooking.
  3. Blanch the bok choy: Using the same boiling water, add the bok choy and blanch it briefly until tender-crisp. Drain and set aside.
  4. Cook the wontons: Gently drop the wontons into the simmering broth. Cook for about 5 minutes, or until the wontons float to the surface and are cooked through.
  5. Assemble the soup: Divide the cooked noodles, bok choy, and wontons among serving bowls. Ladle the hot broth over the ingredients, sprinkle with chopped green onions, and optionally drizzle with chili oil for a spicy kick. Serve immediately and enjoy your warm, comforting wonton noodle soup!
