Instructions

  1. Prepare the pan: Line a sheet pan with tin foil—do not use parchment paper, as it can catch fire. Lightly spray the foil with cooking spray to help prevent sticking.
  2. Toast marshmallows for blending: Arrange 10 marshmallows on the foil. Using a blow torch, toast 8 of them on all sides until deeply charred to bring out a smoky flavor.
  3. Toast marshmallows for garnish: Toast the remaining 2 marshmallows just until lightly golden for garnish. Alternatively, you can toast marshmallows under the oven’s broiler or over a gas stove flame or open fire, watching carefully to avoid burning.
  4. Combine ingredients: Scoop your ice cream into a mixing vessel large enough to hold all ingredients with some room to blend. Add the milk, the 8 charred marshmallows, and a pinch of salt.
  5. Blend the milkshake: Use an immersion blender or regular blender to blend the mixture until completely smooth and creamy.
