Instructions
- Soften the Dates: Add the pitted dates and vanilla extract to the food processor jar. Blend until the dates are soft and begin to form a ball. If your dates are too dry, add a couple of tablespoons of water to help the mixture blend smoothly.
- Process the Nuts: Add the nuts to the food processor. Add a pinch of salt and the cinnamon powder or pumpkin spice. Blend to your desired texture—I prefer to leave some coarse bits for extra crunch, but you can blend it to a fine powder if you wish. The nuts will naturally release some oil during processing, which helps bind the mixture.
- Combine Dates and Nuts: Mix the blended dates and nut mixture together in a bowl. You should have a sticky dough. Use your hands or a spatula to thoroughly combine the ingredients.
- Shape the Balls: Scoop about 1 tablespoon of the mixture and roll it between your hands into bite-sized balls. Alternatively, use a small cookie scoop for uniform pieces. Arrange on a rimmed baking sheet or plate. Enjoy your Date Nuts Energy Balls immediately or store for later!
Notes
- You can toast the nuts on low heat beforehand to enhance their flavor and help release their oils for better texture. This step is optional but highly recommended.
