Ingredients You’ll Need

Let’s talk ingredients! This spread only needs a handful of pantry and fridge staples, yet each one plays a starring role, bringing texture, flavor, or a pop of color to the table. Be sure to start with the freshest cucumber and green onion for that vibrant taste!

  • Cucumber: The heart of the recipe, bringing fresh, juicy crunch and beautiful green specks throughout the spread.
  • Green onions: Add a burst of gentle sharpness and a touch of color, balancing out the creaminess perfectly.
  • Cream cheese: Softened to room temperature, this is the creamy, dreamy base that makes the spread silky and decadent.
  • Worcestershire sauce: Just a splash lends savory depth and a big flavor boost — don’t skip it!
  • Salt: Essential for rounding out all the flavors and tying everything together in a savory symphony.

How to Make Cucumber Cream Cheese Spread

Step 1: Prep the Veggies

Peel half of a cucumber and cut it into chunky pieces — you want enough texture to keep things interesting. Next, trim the roots from the green onions and give them a quick slice. The fresher your veggies, the more vibrant your spread will taste!

Step 2: Chop the Cucumber and Green Onion

Add the cucumber chunks and sliced green onions to your food processor bowl. Cover and pulse until coarsely chopped. Be careful not to over-process; leaving little bits gives the Cucumber Cream Cheese Spread its signature light crunch and pops of color.

Step 3: Add Cream Cheese and Flavorings

To the food processor, add your softened cream cheese, Worcestershire sauce, and a pinch of salt. Blend everything together until just combined. Resist the urge to blast it too long — stopping at small chunks ensures you get some bites with satisfying cucumber pieces.

Step 4: Chill for Ultimate Flavor

Scoop the mixture into a bowl, cover, and refrigerate overnight. This is the secret step! As the spread chills, the flavors meld into something far more delicious than the sum of its parts. Trust me, the overnight wait is worth every second.

Garnishes

A sprinkle of freshly chopped green onion or a scatter of tiny diced cucumber on top just before serving gives this Cucumber Cream Cheese Spread an inviting look. You could even add a sprig of fresh dill or a dusting of cracked black pepper for a little extra flair and flavor.

Side Dishes

Pair your Cucumber Cream Cheese Spread with crisp bagel chips, buttery crackers, or slices of crusty baguette for a classic snack. It’s also beautiful with fresh vegetable sticks — think carrots, bell peppers, or even cherry tomatoes for vibrant color and crunch.

Creative Ways to Present

Use it as a chic bagel schmear at brunch, slathered on mini toasts for a party appetizer, or tuck it inside pinwheel sandwiches for a school lunch upgrade. For showers or special events, spoon Cucumber Cream Cheese Spread into hollowed-out cucumbers or stubborn cherry tomato halves for adorable bite-sized hors d’oeuvres.

Make Ahead and Storage

Storing Leftovers

Store any leftover Cucumber Cream Cheese Spread in an airtight container in the refrigerator. It will keep wonderfully for up to 3-4 days, staying creamy and flavorful — just give it a good stir before serving again to restore its silky smoothness.

Freezing

It’s best not to freeze the Cucumber Cream Cheese Spread, since freezing can alter the texture of both the cucumber and the cream cheese, making the mixture watery once thawed. For optimal freshness, enjoy it within a few days of making.

Reheating

No reheating required! In fact, this spread is at its very best served chilled straight from the fridge. If you’d like to soften it slightly before spreading, simply let it sit at room temperature for 10-15 minutes.

FAQs

Can I use low-fat or non-dairy cream cheese?

Absolutely! You can substitute low-fat or plant-based cream cheese if you prefer. Just keep in mind that the texture will be a little different, but the Cucumber Cream Cheese Spread will still be fresh and tasty.

How finely should I chop the veggies?

Aim for small, noticeable pieces rather than a puree. The little bits of cucumber and green onion give the spread its delightful crunch. Over-processing will turn the mixture watery and dull — less is more here!

Can I add herbs or spices to the spread?

Definitely! Fresh dill, parsley, or even chives make wonderful additions. For a little kick, sprinkle in some black pepper or garlic powder. Customize your Cucumber Cream Cheese Spread to suit your favorite flavors.

Is this recipe gluten-free?

The spread itself is gluten-free, making it a fantastic choice for guests with dietary restrictions. Just double-check your Worcestershire sauce label if you need to be sure, and use gluten-free crackers or veggies for serving.

What’s the best way to soften cream cheese quickly?

Cut your block of cream cheese into smaller pieces and let it sit at room temperature for about 30 minutes. If you’re in a rush, you can microwave it (unwrapped) for 10-second intervals until soft but not melted.

Final Thoughts

You won’t believe how much flavor and freshness this easy Cucumber Cream Cheese Spread adds to any gathering, brunch, or quiet afternoon snack. Once you make it, I promise you’ll find endless reasons to whip it up again and again. Give it a try and watch it disappear from the table — it’s truly a keeper!

Description

This Cucumber Cream Cheese Spread is a refreshing and flavorful appetizer that is perfect for any occasion. The combination of creamy cheese, crisp cucumber, and savory green onions creates a delicious spread that is great for serving with crackers or toasted bagels.

Ingredients

Cucumber Cream Cheese Spread:

  • 1/2 cucumber, peeled and cut into chunks
  • 3 green onions
  • 8 ounce block cream cheese, softened to room temperature
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon salt

Instructions

  1. Add 1/2 cucumber, peeled and cut into chunks to food processor bowl. Trim away roots from base of 3 green onions and cut into slices and place in food processor. Cover and process until coarsely chopped (DON’T OVER PROCESS!)
  2. Add 8 ounce block cream cheese, softened to room temperature, 1 teaspoon Worcestershire sauce and 1/8 teaspoon salt. Cover and process again until combined. Again, try not to over process so you have some chunks of cucumber in there. Transfer to a bowl.
  3. Cover and refrigerate overnight for flavors to blend. Please don’t skip this step and try to eat it right away – trust me, it makes a big difference in flavor when you let it hang out overnight.

Notes

  • Electric hand mixer instructions: Finely chop the cucumber and the green onions. In a medium bowl combine cucumber, green onions, cream cheese, Worcestershire sauce, and salt. Beat with an electric mixer until smooth. Cover and refrigerate overnight for flavors to blend.
  • Use as little or as much cucumber as you like. Make it to your taste! Serve on a toasted bagel or crackers.
